Strawberry Ginger Mojito


Well its been hot enough for summer lately here in Atlanta.  Temps have been way up in the 80's and the kids have played outside non-stop.  We even opened our pool the last day of February.  And I have not been able to resist making a few summer cocktails.   It's been great watching the kids play while we grill up something tasty for dinner.  I usually tend to prefer vodka based cocktails, but we were all out the other night.  So I opted to go for a mojito.

Instead of making a simple syrup, I used some agave nectar I had.  And I decided to muddle in some strawberries at the last second, too.  They were just a little past the turn and I knew no one in my house was going to want to eat them. So why not drink them, right? Also, I didn't have any seltzer so I used ginger ale.  Which was delicious, mostly because I love ginger ale and am not a fan of seltzer.

I'll keep this drink at the ready this summer.  I'm certain it'll be a crowd pleaser.

Strawberry Ginger Mojito
adapted from White On Rice Couple

1.5 oz agave nectar
3 fresh strawberries, diced
4 mint sprigs
1 lime, juiced
2 oz light rum
ginger ale

In a cocktail shaker, muddle the nectar, strawberries and mint leaves with a spoon or muddler.  Crush the berries and mint well.

Add the lime juice and rum.  Put the top on the shaker and shake well.   Pour into a glass filled with ice cubes and top off with ginger ale.

where do you get the agave nectar?...love all your food and drinks!...found you from pinterest

I've gotten agave nectar at Trader Joe's or the farmers market here in Atlanta in the past. You could check the sugar aisle at your local grocery store. If you are hard pressed to find agave nectar, you could substitute simple syrup.
