Black Bean and Tomato Quinoa

This dish is so perfect for my family.  One of my kids' favorite snacks is black beans, diced tomatoes, and shredded cheddar.  So when I saw this, I could not make it fast enough.

I had meant to serve this as the main dish.   You know, because quinoa has such a high protein content.  But at the last second, I thought Nico might be a little miffed if I just gave him a quinoa salad.  I threw together some veggie burgers with avocados and it was all perfect together.

Whenever I make quinoa, I test it when its done cooking to be sure its done.  I'm always so nervous because plain quinoa is so.... plain.  I'm thinking, "hmmm, this is going to be boring!"  Quinoa needs add ins.   And the lime vinaigrette on this is so light and delicious.  Everyone loved it.  This is sure to be a go to this summer.

Black Bean and Tomato Quinoa

2 teaspoons grated lime zest
2 talespoons fresh lime juice
2 tablespoons unsalted butter, melted and cooled
1 tablespoon vegetable oil
1 teaspoon sugar
1 cup quinoa
1 can black beans, rinsed and drained
2 medium tomatoes, diced
4 scallions, chopped
1/4 cup chopped fresh cilantro

Whisk together lime zest and juice, butter, oil, and sugar.  Season with salt and pepper.

Place quinoa in a sieve and rinse under cold water, for several minutes.   Cook quinoa in a medium pot of salted boiling water, uncovered for 10 minutes.  Drain in a sieve, then place the sieve over a pot of simmering water.  Cover quinoa with a kitchen towel and allow to steam for 5 minutes.   Remove from the pot and transfer to a bowl.

Add the dressing to the quinoa and toss until absorbed.   Stir in remaining ingredients and season with salt and pepper.

Do you use a microplane thingy? I know this sounds so novice but I was reading about lemon zest on CI and jotted down that I think I need a microplane. And a juicer. But you don't use a juicer so maybe you don't use a microplane either. Discuss.

Jamie, I do use a microplane. If you use a lot of citrus, its a great investment. I use it multiple times a week. I used to use a large lemon peeler then mince the peels on a cutting board.

No I do not have a juicer. I just squeeze the citrus with my hands. Although, an electric juicer in on my radar to pick up before the summer so I can make fresh grapefruit juice.
