This french toast comes from my days working at a country club in Connecticut. It was one of the most popular menu items. It was a standard French toast without the egg nog, but some members of the club made their own variations on it when they ordered it. One girl would ask the chefs to make a peanut butter sandwich with the challah, then dip the sandwich in egg custard and Rice Krispies. Genius!
I love this fun take on French toast. Challah bread dipped in egg nog custard, then in Rice Krispies and grilled until golden. Not exactly the most healthy lunch, but a very welcome treat! This would make a great Christmas morning breakfast.
Krispie Egg Nog French Toast
2 eggs
1/2 cup egg nog
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
splash of rum (optional)
1/2 cup Rice Krispies
2 thick slices challah bread
1 tablespoon butter
maple syrup
In a wide, shallow bowl, whisk together the eggs, egg nog, cinnamon, nutmeg and rum if using it. In another wide, shallow bowl, pour the Rice Krispies. Dip the challah in the egg mixture, flip it over and let it sit until soaked through. Remove the challah from the egg mixture and dip both sides in the Rice Krispies.
Heat a 9" skillet over medium heat and melt the butter. Add the prepared challah and grill until golden, about 4-5 minutes per side.
Serve with warm maple syrup.

If Jeff sees this, he is going to leave me to go live with you. Egg nog and French Toast are his two most favorite things in the world. This will definitely be part of Xmas brunch :)
